- Size: Less than 3.0 hectares combined from 15 plots
- Varieties: Aligoté, Chardonnay, Pinot Noir
- Viticulture: Organic (in official conversion), biodynamic practices, vineyards mostly planted with massale selection vines, most work is done manually, minimal tractor usage for spraying and plowing from May to July, vineyard practices are customized based on the needs of the individual vines: pruned with either guyot simple, guyot-poussard, or goblet methods and canopies are either trimmed or tied.
- Vinification (whites): Vinified without added SO2, directly pressed, cold settled, ambient yeast fermentation and aging for 12 months in barrels (new oak is used only for cuvées where more than 2 barrels are produced, up to 30%), occasional lees stirring, SO2 added after malolactic fermentation and/or before bottling (60-80 ppm total at bottling), light fining and filtration.
- Vinification (reds): Vinified without added SO2, mostly de-stemmed, cold macerated, 1-2-week vinification with daily pump-overs and a few punch-downs, aged in barrels for up to 13 months (new oak is used only for cuvées where more than 2 barrels are produced, up to 30%), SO2 added after malolactic fermentation and/or before bottling (40-60 ppm total at bottling), no fining, some light filtration.
